Sometimes it's a sketch, it's looking for images and artwork to see what is possible. It can be a test run like the one pictured with leftover roses. It's testing shape, size, colour, style, drying time, so we can create a one-of-a-kind artistic piece exactly the way you want
This also applies to all of our custom cake toppers and edible printer work as well. Often, this takes time on the Cricut canvas or in photoshop to create the desired design

Supplies & Tools
There are so many supplies and tools that are required to make each cake perfect. Sometimes, we even go the extra mile and purchase specific equipment to make a custom design.
From the premium 1/2 inch cake boards that we use so your cake is stable & secure to the boxes in every size to accommodate each and every size of cake.
We use the best equipment the cake industry has to offer with tools imported from all over the world. We also have more than one set of everything to help prevent cross contamination for our clients with food sensitivities.

Ingredients
We are always sourcing the freshest and highest quality ingredients. We shop 3-4 times a week and buy local when we can but often consistency is key.
We order almost all of our ingredients in sealed bags to ensure freshness. We also use the slightly more expensive, name brand ingredients because they are more consistent in texture/flavour and with how they bake.
Unopened ingredients are always used for our Clients with more serious food sensitivities to be extra safe.
We always real vanilla bean and fresh fruits for our fillings (if available in season) and we always take cake to sift our ingredients. This extra and often overlooked step ensures the perfect lightness and fluffiness that we strive for in all of our cakes.

The Recipe
Each of our recipes has been 6+ years in the making and we are still developing recipes daily, tweaking each one trying to constantly improve the texture and taste.
We also alter the amounts of ingredients in our recipes depending on the time of year as the air temperature and humidity changes can affect baking.

Mixing
Mixing ingredients is a crucial step - not too slow, not too fast, not over mixing so the layers don't deflate. Adding ingredients at the right speed and at the right time in the mixing process and in the right amounts.
Every cake is made the day before to ensure freshness with the exception of tiered wedding cakes which may be made 2 days ahead, one day for baking and a second for icing and stacking.

Layers
Finally it's time to bake! Correct shelf placement in the oven is crucial and sometimes alternating the location in the oven throughout to ensure an even bake.
Each oven is different so knowing the equipment is vital to prevent overcooking.
Once the layers are done baking they need time to rest and cool before slicing.

Leveling
Levelling a cake isn't easy but it is an essential step to getting a perfect cake, especially it the cake is more then one tier.
Some people use knives, or wire slicers, some people just used the entire layer and just level it with icing.
We use Agbay cake slicer to ensure an even cut and consistent hight of each layer. each cake is now 4-5 layers to produce a prefect icing to cake ratio.

Cut Layers
Cut layers are checked for moistness, aeration, and even bake throughout, sometimes this is accomplished by "testing" the tops/bottoms that are cut off.
The layers are then soaked in a simple syrup and additional flavouring is added to lock in moisture and enhance flavour.

Stacking
Stacking a cake layer by layer, making sure everything is level. The more you are off at the beginning, the more you will be off at the end.

Crumb Coat
Crumb Coat is the first layer of exterior icing to deal with all of the crumbs so they don't end up in the final layer of smooth buttercream and ruin the final appearance.

Finishing Layer
Using a smooth buttercream and CakeSafe discs ensures a smooth finish and results in an even distribution of buttercream for the perfect slice. Even if there is texturing being added, this blank canvas is the starting point.

Decorating & Setup
Finalizing the design can take up to an hour+.
If we are delivering, then the finishing touches will be done on site otherwise final assembly with take place no more than an hour before your scheduled pickup.
We drive to the flower shop in the morning of your event to purchase and pick up the fresh flowers which have been special ordered and set aside ahead of time and wait until half an hour before pick up before placing them.
Sugar work, Gumpaste figurines, and/or macarons are placed and custom signs are inserted or attached to the box depending on final packaging.

Packaging & Pick Up
We provide packaging and boxes for all cakes and cupcakes. Cakes all have non-slip mats underneath them for easier transport when you pick up.
We have a contactless pick-up stand out front where we can place your items as you arrive and meet you at the door. We can also help you with the placement of your cake in you vehicle but if you can bring someone with you, a lap is best. If not, the passengers side footwell or the back trunk with objects around to secure the box in place is best. Remember to turn the A/C to the max!
