When it come to flowers like peonies, it means individually making pistols and stamens.

Gumpaste is coloured with edible dyes and then each petal is individually rolled, shaped, and then pressed to create the veining. My goal is to make sugarflowers realistic which means getting the petals to be as thin as possible.
Flowers like ranunculus can have over 200 individual petals when fully assembled.

Shaping Petals
The petals need time to dry and some need to be shaped to curve inwards when assembling the flower. Some flowers like roses have petals shaped as they are being assembled and dry on the partially completed flower.

Assembling the flower petal by petal. Sometimes they get dusted before assembly but more often dusting happens after assembly is complete.

The flower is completed but not dusted. It gets placed into styrofoam blocks and put into one of our humidity controlled dry cabinets until it is solid enough to be lightly dusted.

A light dusting helps enhance colours, bings out detail, and creates depth.

Edible Dusts
Sugar flowers are made for edible dyes and dusts.If you want to try eating them, we recommend breaking off a petal - they taste kind of like a dried marshmallow!

The finished flower after dusting with petals so thin they are translucent letting the light shine through, just like the real thing.

Finished sugar flowers are placed back into their styrofoam blocks and again stored in a temperature and humidity controlled dry cabinet until the cake is ready for them.

Greenery, Leaves, Fillers, Berries
Additional greenery, berries, and small flowers are often used as filler just like with fresh flowers.

Details like these raindrops can also be added after the flowers are dusted and dried.

Arrangement on the Cake
We place sugar flowers onto cake approximately one hour before pick up or preferably at the venue when there are a lot of them

The final design is completed. Extra leaves are tucked in, flowers are rotated just so, and small touch ups are done.

Storing Sugar Flowers
For weddings and large sugar flower cakes we provide styrofoam blocks to place the flowers into when you take them off the cake for slicing.
After your event you can store sugar flowers in a low humidity environment out of direct sunlight. We recommend something like a bell jar in the photo that was constructed by one of our brides containing sugar anemones and a family tarten ribbon used on her wedding cake.
